A lush, delicious and "serious" wine but in a fun package! The nose is fruit driven with fresh plum, bing cherry, spicy peppercorn and zinberry. The mouthfeel is soft with a hint of milk chocolate, sweet oak, and a long vanilla finish. The deep color and firm structure are enhanced by the addition of the Petite Sirah and the firm tannins softened by moderate oak. Enjoy this POIZIN with caution; it is The Wine to Die for!

Powerful forest fruit and wild strawberry aromas persist on the nose, balanced by hints of fine French oak. The vibrant ruby red colors hint at a young wine, but the taste reveals a remarkable maturity. Elegant soft fruit flavors are already finely integrated into the structure of the wine, as is the oak, adding a subtle but powerful complexity to the flavor. This is a light smooth wine, easy to drink at any time of the year and exhibiting typical character of a young Pinot Noir.

This wine has been made for early drinking using advance cold macceration techniques, but will age well for several years to come. It has a 100% malolactic fermentation - allowing the perfect integration of the natural acides into the structure of the wine.

Vampire Pinot Noir is well suited to Venison and game dishes, and is equally well adapted to pasta dishes featuring basil and tomato sauces. It can also be enjoyed as an aperitif or as an after dinner wine with snacks and blue cheeses.

Vampire Cabernet Sauvignon is sourced from several small-berry clones of this traditional Bordeaux varietal, grown in the Paso Robles region of California’s Central Coast. An extended growing season, with sunny, moderate daytime temperatures, along with cool summer nights, allows ideal fruit development at this site. Well-drained soils, rich in maritime fossils, add uniquely aromatic components to this fruit-forward wine.

Classic, small-lot fermentations, followed by aging with both European and American oak, gives full expression to the rich varietal flavors in this wine. Judiciously blended with small amounts of Merlot for softness, and Syrah for added structure, our Cabernet displays ripe flavor character and a lovely aroma that will continue to develop with additional time in bottle.

Ideal for grilled steaks and chops, or with rich red pasta dishes, our Cabernet Sauvignon is well-suited for the table, and is a wonderful complement to any fine meal.

Vampire Merlot was harvested from cool-climate, coastal vineyards at the southern end of the Central Coast’s Paso Robles viticultural district. At this site, sunny summer days are tempered by daily afternoon fog rolling in off the nearby Morro Bay and Pacific Ocean.

Picked at peak ripeness, our Merlot is fermented on the skins for two weeks, with three-times-daily pumpovers, the traditional method of extraction which brings rich color and supple tannins to the new wine. Aged with a combination of both French and American oak, our Merlot develops graceful fruit flavors in the cellar, complemented by subtle shadings of vanilla and toast from the oak.

At the completion of the aging process, this Merlot was carefully blended with 8% Cabernet Sauvignon for added depth and structure, as well as 8% Zinfandel, which adds a spicy note on the palate. Approachable now, Vampire Merlot is perfectly balanced for additional bottle aging.
